Tasty Tuesday – Mbuzi Pota
On Saturday wife brought out a mbuzi(goat) leg that had been in the freezer for a while. Anyone who knows me knows that I am big on meat. It runs in our family. My grand mother is 85+ but if you invite her for a function without meat there shall be trouble…she doesn’t understand vegetarianism, quite frankly, neither do I.
So anyway, this is something very easy to make. You shall have to excuse my non structured means of description of the methods. All I know is that this was tasty and you too can make it. You need [mbuzi | a number of onions | tomatoes] for the mbuzi, [cooking oil | garlic | vinegar | salt] for the marinade, potatoes.
For the marinade: Mix 1 tablespoon of ground garlic, 4 tbs(tablespoon) of cooking oil, 2 tbs of vinegar, 1teaspoon of salt and 1/4 cup hot water in a container. Mix well then add 1/2 liter of cold water. Mix well then soak the whole chunk of meat in there and let it stay for minimum 1hr. The longer it stays the deeper the flavor goes so if you leave it the previous day even better. I should say that there are so many ways to make marinades, feel free to use any and if you have a special marinade, kindly share with us here, yes?
Peel and boil your potatoes whole or cubed, whatever you like. Make sure not to leave them too long that they flake. Drain when they are done and oil a flat baking tin. Put in the potatoes to roast in the oven at 200degC.
Take the marinated mbuzi and place in an non-stick baking tin or a casserole dish. Throw in the sliced tomatoes and chunks of onions that you prepared earlier. Put this in the oven with the potatoes. Grill while turning occasionally to brown all sides evenly. It should be done in 40 or so minutes.
